Guide Review - Fuel Restaurant
Fuel is, at it's heart, all about superbly-cooked high-end meats. Though the menu does include several seafood options, it's the classic (and often French) meat dishes that are truly worth the trip.
Among its signature dishes are the enormous dry-aged Alberta Prime Ribeye, a 12 ounce cut served with morels, new potatoes, and spinach, for $35, and the Côte de Buf for Two, for $125.
The stand-out, also made for two, is the Whole Confit Polderside Duck for $79. Slow-cooked over days, the duck is finished when ordered and served tender with a crisp skin. Absolutely delectable, the duck is well worth the price--and perfectly paired with a recommended wine from Fuel's expansive wine cellar.
My only (small) complaints about Fuel are that the Glorious Garnish 'Celebration' Salad--made with ricotta, walnut oil and salumi--is too salty and that the "Chef's accompaniments"--the sides chosen for dishes like the duck and Côte de Buf--can be slight.
